Oatmeal Chocolate & Almond Cookies...
3 cups quick-cooking oats, divided
1 cup milk
3/4 cup butter, softened
2 cups packed brown sugar
1 egg
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 cup semi-sweet chocolate chips
1 cup toffee bits, peanut butter chips or butterscotch chips
1 cup coarsely chopped unblanched almonds, toasted
1/2 cup flaked coconut-optional
1. Preheat oven to 325F. 2. Set aside 1 1/2 cups of the oats. Soak remaining oats in milk for 5 minutes. 3. Meanwhile in a large bowl, cream together butter, sugar and egg until light and fluffy. Add oat mixture the reserved oats and remaining ingredients. Stir until well blended. 4. Drop by heaping teaspoonfuls onto greased cookie sheets. 5. Bake for 10-12 minutes or until golden brown. 6. Allow to cool on rack for a few minutes before removing cookies.

Oatmeal Coconut Cookies...
1 cup brown sugar
1 cup white sugar
1 cup butter
2 eggs
1 cup coconut
1 cup pecans or walnut crumbs
1 cup oatmeal
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 1/2 cups flour
1 tsp vanilla
Mix sugars, butter, eggs and vanilla. Mix dry ingredients together then add to wet ingredients. Add oats, coconut and pecans last to the mixture. Roll into balls the size of a walnut and flatten. Bake at 325 on an ungreased cookie sheet for 8-10 min. Makes 80 cookies

Choco-Nana Squares...
1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup mashed ripe banana
1 cup milk
3 cups flour
2 tsp baking powder
2 tsp baking soda
1 1/4 cup peanut butter chips
1/4 cup mini semi-sweet chocolate chips
1. Preheat oven to 325F. 2. In a large bowl, cream together butter, sugar and eggs until light and fluffy. Add mashed banana and milk, blend well. Blend in the flour, baking soda and baking powder. 3. Set aside 1/4 cup of the peanut butter chips. Add remaining peanut butter chips to batter, blending well. 4. Spoon batter into greased 9x13" baking pan. Sprinkle reserved peanut butter and chocolate chips evenly over batter. 5. Bake for 45-50 minutes or until done. 6. Cool on wire rack for at least an hour. Cut into squares.

Almond Cupcakes...
2 cups flour
1 cup butter
1 egg
2/3 cup brown sugar
2/3 cup white sugar
1 tsp almond extract
1/2 tsp baking soda
1/4 piece cherry on top of each
Preheat oven to 325. Blend butter, egg and almond extract. and sugars. Then stir in dry ingredients. Form into balls and place in greased muffin tins. Place 1/4 piece cherry on top. Bake for 10-15 min or until done. It all depends how hot your oven gets.

Apple Spice Cookies...
1 3/4 cup flour
1 tsp baking soda
1 1/2 tsp cinnamon if not using ginger and nutmeg
1/2 tsp each ginger, nutmeg & salt
1/2 margarine, softened
1 1/4 cup packed brown sugar
1 egg
3/4 cup raisins
3/4 cup chopped walnuts
2 apples cored & shredded
Preheat oven to 325. In a small bowl, stir together first 6 ingredients. In a large gowl, beat margarine and sugar until light and fluffy. Beat in egg. Stir in flour mixture just until blended. Fold in raisins, walnuts and apples. Drop dough by tsp 3" apart onto greased cookie sheet. Bake 10-12 min or until cookies are light brown in center and edges are brown.

Cherry-Cream Cheese Coffeecake...1-1/2 cups flour
1 cup old-fashioned or quick cooking oats uncooked
1 cup sugar, divided
3/4 cup cold butter or margarine
1/2 cup sour cream
2 eggs divided
1/2 tsp baking soda
1 pkg (8 oz) cream cheese, softened
1/4 tsp almond extract
3/4 cup cherry pie filling
1/3 cup sliced almonds
Preheat oven to 325-350F. If using a silver a 9 inch springform pan (or to 325F if using a dark nonstick springform pan). Grease pan. Mix flour, oats and 3/4 cup of the sugar in a large bowl; cut in the butter untl mixture resembles coarse crumbs. Remove 1 cup of the crumb mixture; set aside. Add sour cream, 1 of the eggs and baking soda to remaining crumb mixture; ; mix well. Spread onto bottom and 2 inches up side of pan.
Beat cream cheese, remaining 1/4 cup sugar and almond extract in small bowl with electric mixer on medium speed unl well blended. Add remaing egg; beat on low speed just until blended. Spoon into crust. Top with pie filling; sprinkle with reserved 1 cup crumb mixture and the almonds.
Bake 50-55 min or until golden brown.l Cool 15 min. Run knife or metal spatula around rim of pan to loosen cake; remove rim of pan. Serve warm or at room temperature. Store leftover coffeecake in refrigerator.
Great substitute
Substitute 3/4 cup strawberry or cherry preserves for the cherry pie filling.

Oatmeal Carrot Muffins...1 cup soured milk
1 cup rolled oats
1/2 cup grated carrot
1/4 cup packed brown sugar
1/4 cup melted butter or vegetable oil
1 egg slightly beaten
1 tsp grated orange rind
1 cup flour
1/4 cup sugar
1 tbsp baking powder
1 tsp salt
1/2 tsp baking soda
1 cup raisins
1. Preheat oven to 325-350F. Lightly grease non stick muffin pans.
2. In large bowl pour soured milk over oats, stir to mix. Cover and let stand for 10 min.
3. Mix together carrots, brown sugar, oil, egg and orange rind, stir into oat mixture.
4. In seperate bowl, stir together flour, sugar, baking powder, salt, and baking soda, stir in raisins. Stir into batter just until moistened.
5. Spoon into prepared muffin pans, filling almost to top.
6. Bake for 20-25 min or until top is firm to touch.
To sour milk spoon 1 tbsp vinegar into measuring cup. Add enough milk to make 1 cup. Let stand for 5 min then stir.

Rice Krispie Polka Dot Squares...4 cups rice krispie cereal
1 cup chocolate chips
1/2 cup coconut
1/2 cup walnut crumbs
1 can sweetened condenced milk
Preheat oven to 325F. Put rice krispie cereal in a plastic bag and crush with hands but not to crumbs. Put in large bowl and add chocolate chips, walnut crumbs and coconut. Stir with spoon until mixed together. Add sweetened condenced milk and stir until mixed completely.
Line 8 inch square pan with wax paper and spray wax paper with cooking spray. Make sure all of it is covered or mixture will stick to paper. Put mixture on top of paper and press down. Bake 20-30 minutes or until top is starting to brown. Let it cool on wire rack 10 min. then slowly remove wax paper. If any starts to stick take a sharp knife and pry away from squares. Let cool completely before cutting. Enjoy.

Apple Bread Pudding...2 eggs
1 can milk
1 1/2 cups milk
add raisins if desired
1/2 cup sugar
cinnamon
1 tsp vanilla
5 slices white bread or raisin bread cut into small pieces
3 large apples, peeled andcut in small slices
3 tbsp butter
Beat eggs, add canned milk, milk, sugar and vanilla. Mix well. With apples add sugar and cinnamon. mix well. Well butter casserole dish and add bread pieces. Sprinkle cinnamon over bread and mix. Add wet ingrients and apples and mix well. Dot with butter and bake 325-350F for 45 minutes. Pudding is done when a knife inserted comes out clean.
What I did last time was break up 2 slices of bread then sprinkle with cinnamon then the rest and more cinnamon. The more you use the better it smells and tastes. If you don't have canned milk add and extra cup of regular milk or until it soaks up everything.

Cinnamon Bread...1/3 cup butter
1 cup sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sour milk
3 tbs brown sugar
1 tbsp cinnamon
Preheat oven to 325 F. Mix brown sugar and cinnamon and set aside. Cream butter and sugar until light and fluffy. Add eggs and vanilla; beat until smooth. Combine flour, baking powder, baking soda and salt. Add to creamed mixture alternating with milk (to make sour milk, add 2 tbsp vinegar to milk). Spoon 1/3 of the batter into a greased loaf pan. Sprinkle with half the sugar/cinnamon mixture. Pour the rest of the batter in loaf pan then sprinkle the rest of the sugar/cinnamon mixture on top. Bake until golden brown, about 1 hour.

Peach Cheesecake Squares...1 200 g pkg almond amaretti biscuits
1/4 cup butter, melted
Topping
2 pkgs cream chees at room temperature
1/2 cup sugar
3 egg
2 tbsp lemon juice
1 tsp. almond extract
1/2 tsp. vanilla
1/4 cup peach or apricot jam (without pieces)
2 medium peaches peeled, halved and pitted
1 tbsp. orange juice or water (optional)
In food processor, process biscuits to make about 1 1/2 cups fine crumbs. In small bowl, stir crumbs with butter until well blended. Firmly press into bottom of 9 inch square cake pan. Refrigerate while preparing topping.
Topping:
In large bowl beat cream cheese until smooth. Beat in sugar until well blended. Beat in eggs one at a time, beating well after each addition. Beat in lemon juice, almond extract and vanilla. Pour over crust. Bake in 325-350 F oven just until set and golden brown around edges, 35-45 min. Run knife around edge of cake. Refrigerate at least 2 hr before cutting into squares. Cutting tip:keep knife wiped clean.
In small sauce pan melt jam over low heat. Slice peaches into wedges, placing about 2 on each square. Brush peaches completely with melted jam. If jam is too thick for brushing, add a bit of orange juice.

Fruited Pound Cake...2 1/4 cups flour
1 1/2 cups sugar
1 cup butter softened
1 (8 oz) pkg cream cheese softened
4 eggs
1 1/2 tsp baking powder
1 1/2 tsp vanilla
1 1/2 cups mixed chopped candied fruit
1/2 cup chopped walnuts
Heat oven to 325 F. In large bowl combine 1 1/4 cups flour and all ingredients except candied fruit and walnuts. Beat at medium speed scraping bowl often, until well mixed. By hand stir in remaining 1 cup flour, candied fruit and walnuts. Pour into 2 greased 8x4 loaf pans. Bake for 50-60 min or until done. Cool 10 min.then remove from pan. Cool completely before cutting.
This freezes real well. If you don't like the fruit use raisins and nuts instead.

Sugar Pie...2 cups brown sugar
1 cup carnation milk
2 tablespoon flour
1 egg
Mix all together. Put into crust top and bottom. Put a bit of milk with brush over the crust for it to brown well. Cook at 350 degrees Fahrenheit for 30 minutes.

Pie Crust...4 cups flour
2 cups shortening
1 cup very cold water
1 egg
Mix the flour and shortening together. Beat the egg into the water. Incorporate into the flour and shortening mix 1/3 at the time. Do not mix too much because it will get your crust to be hard instead of flakey. Do a ball and put into plastic wrap. Let it stand for 2 hours in the refrigerator at least before use. This crust is very flakey and will be used for sweet or meat pies.

Rocky Road Bars...1 cup graham cracker crumbs
1/4 cup liquid honey
1/4 cup butter, melted
2 cups miniature marshmallows
1 pkg (100g) pecans roughly chopped or pecan pieces
1 cup semi-sweet chocolate chips
Preheat oven to 325-350.
In a bowl, stir together graham crumbs, honey and butter. Pat onto bottom of 8 inch square baking dish. Bake for 8 minutes.
Sprinkle marshmallows over hot graham crust. Sprinkle with pecans, then chocolate chips. Bake for 8-10 minutes or until marshmallows begin to turn golden and chocolate chips are soft. Cool on wire rack.
Cool until firm.

Cheese cake (no bake)...1 package (250 g) Philadelphia cream cheese,
1 can (300 ml) Eagle Brand concentrated sweet milk,
1/3 cup Realmon lemon juice,
1 tsp vanilla,
1 graham piecrust (9 inch)
Raspberry, cherry or strawberry to top the cake.
Prepare your graham crust if not bought all made. Cool it.
Beat the cheese until very light. Add the eagle brand milk. Beat it together for it to be well mixed. Incorporate the lemon juice and vanilla. Mix well. Pour into graham crust.
Refrigerate for 3-4 hours or until firm.
Top with the topping you desire.

Creamy Coleslaw...1 big cabbage,
4 branches celery,
1 chopped onion,
3-tablespoon relish,
5-tablespoon mayonnaise,
¾ cup milk,
¼ cup sugar,
¼ cup vinegar,
Salt and pepper
Chop very small the cabbage, celery and onions. Add the rest and refrigerate 4-5 hours before serving

Chocolate Cake...This recipe is done in three steps.
Step 1 In a bowl mix
2 cups flour,
2 cups sugar,
1-teaspoon soda,
1 half-teaspoon salt
Step 2
On the stove boil
1-cup margarine,
2 squares semi-sweet chocolate,
1-cup water,
1 half-cup cocoa
Step 3
With mixer
2 eggs,
1 half-cup sour milk,
1-teaspoon vanilla
Mix everything and cook into 2 9 inch round moulds for 30-40 minutes at 350 degrees
Chocolate Icing
500 ml icing sugar,
6-tablespoon butter or margarine,
4-teaspoon cocoa

Zucchini Cake...In one bowl
3 eggs (well whipped),
1-cup oil,
2 cups sugar,
2 cups zucchini,
1 tbsp vanilla
Other bowl
3 cups flour,
1 fourth teaspoon magic baking powder,
1-teaspoon salt,
1-teaspoon soda,
3 fourth teaspoon nutmeg,
1-tablespoon cinnamon,
Mix together both sets of ingredients then put in 2 round greased cake pans. Cook for approximately 50 minutes at 350 degrees Fahrenheit. Put a cream cheese icing if desired.

Zuchini Relish...10 cups chopped zucchini,
1 and half chopped onions,
3 tablespoons salt,
3 cups water
Pour the salt and water over the vegetables and let soak overnight. Drain once then rinse with cold water then drain again.

4 cups sugar,
2 cups white vinegar,
1-teaspoon celery seeds,
1 teaspoon mustard seeds,
1-teaspoon turmeric,
2-teaspoon cornstarch,
1 chopped red pepper,
1 chopped green pepper
Add sugar, cornstarch, spices, and vinegar to the zucchinis. Cook over medium heat till it boils. Add red and green pepper and boil 30 minutes. Put into 500 ml or 16 oz jars and seal. Will make 4-5 jars.

Baked Nutty Berry French Bread...
6 thick slices egg bread,
4 eggs,
2 cups milk,
1 tsp vanilla,
1/4 tsp each nutmeg and cinnamon,
3/4 cup brown sugar,
1 cup chopped pecans or walnuts,
1/4 cup butter, melted,
2 1/2 cups mixed berries, strawberry halves, blueberries, raspberries
...1. Arrange bread in single layer in buttered 9x13 baking dish trimming to fit. In large bowl, whisk together eggs, milk, vanilla, nutmeg, cinnamon and 1/2 cup of the sugar. Pour evenly over the bread. Cover and refrigerate for several hours or overnight. 2. Just before baking combine remaining 1/4 cup sugar, milk, nuts and melted butter. Spread berries evenly over bread layer; top with pecan mixture. Bake in 325-350F oven for 35-40 minutes or until bread is puffed in the center aand fruit is bubbling.

Blueberry Bran Muffins...
1 1/2 cups bran cereal,
1 1/2 cups milk soured or buttermilk,
2 cups flour,
2 tsp baking powder,
1 tsp cinnamon,
1 tsp baking soda,
1/2 tsp salt,
1/3 cup brown sugar,
1 egg,
1/3 cup molasses,
1/4 cup butter, melted,
2 cups frozen or fresh blueberries
...1. Preheat oven to 325. Lightly butter or spray muffin pans. 2. In large bowl combine cereal with milk; let stand for 10 minutes. In a separate bowl combine flour, baking powder, cinnamon, baking soda and salt. Whisk brown sugar, egg, molasses and butter in cereal mixture; pour over dry ingredients and sprinkle with blueberries. Stir just until moistened. 3. Spoon into prepared muffin pan. Bake for 25-30 min. Makes 12 muffins. If using frozen berries do not thaw before adding to muffin dough.

Oatmeal Peach Muffins...
1 1/2 cups flour,
1 1/4 cups rolled oats,
1 1/2 cups flour,
2 tsp baking powder,
1/2 tsp salt,
1/4 tsp ground nutmeg,
1 egg,
1/2 cup brown sugar,
1/4 cup butter, melted,
2 tsp vanilla,
1/2 tsp lemon rind,
1 1/2 cups chopped fresh, frozen or drained canned peaches
...1. Preheat oven to 325. Lightly butter or spray non-stick muffin pans.
2. In bowl, combine milk and oats. Let stand for 5 minutes. In large bowl combine flour, baking powder, salt and nutmeg. Whisk egg,brown sugar, butter, vanilla and lemon rind into oat mixture. Pour over dry ingredients and sprinkle with peaches. Stir just until moistened.
3. Spoon into prepared muffin pan. Bake for about 30 minutes or until tops are golden brown and firm to the touch. Let cool.

Banana Bread Pudding...
2 tbsp butter softened,
1 loaf crusty french or bakery-style multi-grain bread,
4 eggs,
3/4 cup brown sugar,
4 cups milk,
1 1/2 ups mashed ripe banana (about 4),
1 tbsp vanilla,
1 cup dried cranberries or tart cherries (optional),
icing sugar
...1. Preheat oven to 325. Spread butter into a 13x9 inch glass baking dish; set aside.
2. Cut bread into 1 inch cubes; set aside. In large bowl whisk in milk, banana and vanilla. Add cherries (if using) to bowl and mix gently to coat. Let stand at room temperature for 10 minutes or until bread is soaked through.
3. Pour into prepared baking dish. Bake for about 50-60 minutes or until puffed, golden and knife inserted in center comes out clean. Serve warm or cold.

Sweet Marie Bars...1/2 cup corn syrup, 1 tbs butter, 1/2 cup brown sugar, 1/2 cup peanut butter, 1/2 cup chocolate chips, 3/4 cup chopped walnuts, almonds or pecans, 2 cups rice krispies TOPPING: 2 tbsp peanut butter, 1 cup chocolate chips...In a pot combine corn syrup, butter, brown sugar, peanut butter and chocolate chips. Stir on medium heat until sugar disolves & ingredients have melted. Remove from heat & stir in nuts & rice krispies. Grease an 8x8" pan & press mixture into bottom. In a seperate pot, heat peanut butter, butter and chocolate chips until chips melt. Spread over base. Refrigerate 2 hours then cut into squares. Let set in fridge overnight. Makes 16 squares.
CHAMP
Beef and Barley (CHAMP) Soup...
1 pound extra lean ground beef, 1 medium onion chopped (2 if desired), 3-4 cloves garlic, 2 large carrots (sliced), 2 large stalks celery (sliced), 1 28 oz. diced tomato, 1 can tomato soup, 2 cans beef broth, 2 cans water, 3/4 cup of pearl barley, Dash of Tabasco sauce (optional), Dash of worstershire sauce (optional) Brown beef and onion in stew pot with non-stick spray. Add carrots, garlic, celery. Sautee for a few minutes. Add tomatoes, tomato soup, beef broth, water and barley. Bring to a boil. Reduce heat and simmer for 2 hours. Note: Can also add mushroom, green peppers, green beans, broccoli, etc. when you add the tomatoes, etc.

Chocolate Pecan Bars...CRUST: 2 cups flour, 1/2 cup sugar, 1/4 cup butter, TOPPING: 4 eggs, 1 cup sugar, 1 cup corn syrup, 1/4 cup butter melted, 1 1/2 cups semi-sweet chocolate chips, 1 1/4 cups chopped pecans, Preheat oven to 350 (180C). Butter a 13x9" cake pan. CRUST: Combine all ingredients until crumbly. Press firmly into prepared pan. Bake for 15-18 minutes or until golden. TOPPING: Beat together eggs, sugar, corn syrup and melted butter until blended. Stir in chocolate chips and pecans. Pour evenly over crust. Bake 35-40 minutes or until set and golden. Cool completely then cut into bars.

Cornmeal Muffins...1 1/4 cups cornmeal, 1 cup flour, 1/3 cup sugar, 1 tbsp baking powder, 3/4 tsp salt, 2 eggs, 1 1/2 cups sour cream, 3/4 cup butter melted & cooled, Preheat oven to 350 (180C). Butter a 12 cup muffin pan. Combine first 5 dry ingredients in mixing bowl. Beat eggs, sour cream and melted butter together. Add to dry ingredients. Mix well.Pour into prepared pan. Bake 15-20 minutes or until toothpick inserted comes out clean.

Mix bread and milk thoroughly in mixing bowl, let stand 30-60 minutes. Stir in remaining ingredients. Mix well. Pour into prepared pan. Bake 40-50 minutes or until set in center.

Blueberry Muffins...1/2 cup butter, softened,1 cup sugar, 2 eggs beaten, 1/2 cup milk, 2 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, 2 cups fresh blueberries (may be frozen), 2 tbsp sugar for topping, In a medium bowl, cream together butter and sugar. Add eggs and mix well; stir in milk. Combine dry ingredients, and add to the mixture, stir to combine. Gently fold in blueberries. Fill greased muffin cups about 2/3 full. Sprinkle tops with a little sugar. Bake in a preheated 325-350F oven for about 20 min or until golden brown.

Blueberry Oatmeal Bars...1 1/4 cups flour, 1/2 cup sugar, 1/2 cup walnut crumbs, 1/2 cup margarine melted, 1 egg, 3/4 cup rolled oats, 1 can blueberry pie filling, Combine all ingredients in a large bowl and mix together with a wooden spoon. Press half of the mixture in a greased 9x9 inch pan.Spread blueberry pie filling evenly over crust then crumble remaining mixture on top. Bake for 45-50 minutes in 325 F oven or until golden brown. Cool then chill in fridge.

Strawberry Crumb Coffee Cake...Mix together 2 cups flour, 1/2 cup sugar, heaping Tablespoon butter, 1 egg, 3/4 cup sour cream, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt. Fold in a cup of strawberry preserves and pour batter into greased/floured 8" square baking pan. For Crumb Topping, mix together 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, 1/4 cup chopped walnuts. Blend in 1/4 cup butter with a fork until "crumbly" and sprinkle onto batter. Bake at 375 about 35 minutes.

Chicken Pot Pie6 Tbl butter2 Tbl Olive oil1 Cup onion, minced3 Cloves garlic, minced 1 Cup carrots, sliced (¼”)2 Lbs skinless chicken breasts, cubed3 cups sliced white mushrooms4 Tbl flour1¼ Cup chicken stock¼ Cup white wine¼ Cup dry sherry1 Tsp thyme2 Cups frozen peas1 Egg1 Tbl creamMake pie pastry and refrigerate at least 30 minutes. Preheat oven to 425 °.Heat 1 tbl butter and 1 tbl oil over medium heat. Add onions and sauté for 5 minutes. Add garlic and sauté for 1 minute. Add carrots and sauté for 4 minutes. Remove mixture to large bowl. Add 1 tb; butter and some oil to skillet and sauté chicken until cooked, about 9 minutes. Add to bowl. Add 1 tbl butter and 1 tbl oil to skillet and sauté mushrooms until juice is released and they “squeak”. Salt and pepper and add to bowl. Add 3 tbl butter to skillet. When foam subsides, add flour and whisk together scraping all the bits up. Whisk 1 minute and add the broth. Mixture will thicken quickly and add wine, sherry, and thyme. Stir to mix thoroughly and thicken slightly then add to bowl. Add frozen peas to the bowl at this time and mix everything well then remove to 9” baking dish. Roll out the dough and place on top of the dish. Brush with egg/cream mixture. When I found this recipe I thought it was perfect for people, like me, who just are not sure how to tell when poultry is cooked thoroughly but not dried out. Give this a try. BAKED STUFFED CHICKEN 6-7 lb. chicken 1 cup melted butter 1 cup stuffing 1 cup uncooked popcorn salt/pepper to taste Preheat oven to 350 degrees. Brush chicken well with melted butter, salt and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for popping sounds. When the chicken's ass blows the oven door open and the chicken flies across the room, it is done. Connie, don't try this at home!! lol

CHICKEN AND MUSHROOM SAUTE-2 tbsp butter, 1 lb boneless skinless chicken breasts cut into strips, 2 cups sliced mushrooms, 1 medium onion chopped, 1 can cream of mushroom soup, 1/2 cup milk-In large skillet over medium heat, melt half of the butter. Saute chicken until no longer pink, about 5 min. Remove from skillet; set aside. In same skillet, melt remaining butter. Saute mushrooms and onion until tender and liquid has evaporated, stirring often. Stir in soup and milk. Bring to a boil. Return chicken to the skillet. Heat through, stirring occasionally. Simmer until it thickens a bit. Serve with noodles or rice.

RICE HAMBURG CASSEROLE- Layer uncooked sliced potatoes in bottom of casserole. Add a layer of carrots, uncooked; 1 can of peas with the juice, 1/4 cup of uncooked rice, 1 medium onion chopped. Add a layer of hamburger, uncooked. Top with 1 can of tomato OR cream of mushroom soup. Add 1 can of water. Bake for 2 hours in 325 F oven.CHICKEN AND RICE CASSEROLE-Place uncooked chicken in bottom of casserole. Wash about 3/4-1 cup of raw rice in cold water to remove the starch. Dump on top of chicken pieces. In 1 cup of boiling water disolve 1 pkg. of Liptons Onion Soup mix and pour over chicken and rice. Add enough water so it just covers everything. Cover with lid. Bake in 350F oven for 1 hour. (you might have to look at it once and stir a little or add water if it looks dry).

3 Apple Pie with Cider Rum Sauce:3c apple cider reduced to 1 1/2c devided,8c slided apples diveded between 3 different types,2TBS rum,1/2c sugar,1/4c brown sugar,2TBS flour,1/2tsp cinnamon,1/2tsp cardamon,1/4tsp nutmag,2TBS butter,pie crust double 9" pie pan Sauce:1/2c rum, 1/4c brown sugar,1 1/2TBS cornstarch,strip of lemon peel yellow part only,1/4tsp cinnamon,pinch each of nutmag,cardamon,and salt,1TBS butterCombine apples,1/4c of the cider,rum in a large pan.Cover simmer tell barely tender.Add the dry ingredients with the apples combine gently.Pour into pie crust dot with butter and cover with top crust.Bake at 375 for 1 hour till done. Sauce:Wisk together,exccept the butter, and bring to a boil on medium heat,add the butter and cook for 2 minutes.Serve warm over pie with ice cream if desired.

Stuffed Chicken Breasts with a Pecan Sauce:1-2 chicken breasts per person,1 box wild rice(don't use the seasoning),1 red apple diced,1green apple diced,1c walnuts,3 eggs,seasoned bread crumbs,2 cloves of garlic chopped,salt and pepper to taste,2tsp of thyme,2 sticks melted butter,Pecan Sauce:1lb pecans,1clove chopped garlic,1 bottle of wine,1TBS of chicken base,1 bay leaf,1quart heavy cream,1 stick butter,2 finely chopped shallotsStart the sauce first in a frying pan.Melt the butter when hot add the pecans.Well now they will cook fast so cook tell they are just hot.In a food processor grind the pecans.Now in a pan add the wine,shallots,garlic,thyme and bring to a boil for 5 minutes.Well then add your cream and bay leaf and let boil for 1 minute the turn the heat down and let simmer 20-30 minutes.While this is going on cook the rice when done add the apples,walnuts and eggsand then the bread crumbs so it will form a ball.In a large oven pan spray it down so won't stick.Then take 1/4 of the stuffing mix to make balls with it and put in a 9x13 pan.You can get 9 stuffed chickens.Now add the chickento the balls so its rounded alittle and pour some melted butter over and bake in a 350 oven for 20 minutes.Now back to the sauce you need to strain it through a fin metal strainer or cheesecloth may need a wooden spoon to help it strain.When done straining put back on the stove and bring to a boil and thickened then add the pecans(to the butter)and let them simmer tell the chicken is done. put the chicken in a glass dish add the sause to it and serve

split two med. butternut or acorn squash and bake em @ 375 for 30 min. let em cool and scoop out the goods.about 3 cups will do. blend wth 2.5 cups stock or water(stock is better). puree till smooth. put in a saucepan with 1 cup orange juice. in a different pan hear 2 TBS. butter and add garlic, 1/2 cup onion,salt and curry spices. saute till soft. add 6 oz mushrooms cover, cook 10 min.add all the stuff in both pans together make sure to taste it and dont be afraid to add more salt and cayenne. it should be sweet and spicy!(like me). you can top with fresh squeezed lemon. or yogur, or sour cream.

Apple Cheesecake-1 cup graham cracker crumbs, 3 tbs sugar, 1/2 tsp cinnamon, 1/4 cup melted margarine-2- 8oz pkgs of crease softened, 1/2 cup sugar, 2 eggs, 1/2 tsp vanilla-4 cups thin sliced apples, 1/3 cup sugar, cinnamon-Combine crumbs,sugar and cinnamon & margarine, press onto bottom of a 9" springform pan. Bake at 325 for 10 min.-Combine cream cheese & sugar, mixing at medium speed until well blended. Add eggs one at a time mixing well after each addition. Blend in vanilla; pour over crust.-Toss apples with combined sugar and cinnamon. Spoon apple mixture over cream cheese layer. Bake at 325 for 1 hour. Loosen cake from rim of pan, cool before removing rim of pan. Refrigerate overnight before cutting.- sprinkle more cinnamon over the apples once they are on the cream cheese

APPLE SQUARES1 cup flour,1 tsp baking powder, 1/4 tsp salt, 1/4 cup butter, melted, 1 tsp vanilla extract, 1 egg, 1/2 cup brown and white sugar, 1/2 raisins, 1/2 cup chopped apple, 1 tsp cinnamonpreheat oven to 325F/165C. Grease a 9x9 " pan.Put all ingredients in a big bowl and mix with wooden spoon just until blended, then add apples and raisins. Spread mixture into the prepared pan and bake for 20-25 min. Cool in pan and cut into squares.use as much cinnamon as you like.

Fudge Cookies (aka "No Bakes")...sorry i dont have meaurements...dump some sugar into a pan then stir in enough Hershey's Cocoa to make the mixture medium brown, add enough milk to make it semi-liquid, heat just 'til it boils (no longer or it will get too sweet for some reason) then remove from heat and plop in a little peanut butter then stir in enough Quaker Minute Oats to soak up the liquid...then either 1) eat it from the pan as a kind of decadent oatmeal, or 2) spoon it into cookie sized pieces on some waxed papar and allow to harden ...mmmm (got milk?)

Here's another one that's as simple as the cannoli recipe is tricky - Easy Chocolate Hazelnut Cookies (with sprinkles even!) - 2 3/4 cups flour 1 cup white sugar 1/2 cup Ghirardelli Chocolate Hazelnut Hot Chocolate Mix (I suppose any sweetened cocoa mix will do) 1 cup butter (softened) 1 tsp vanilla extract 1 tsp baking soda 1 egg Multicolored Sprinkles (optional)...Combine all ingredients except the flour in a large bowl and mix at low speed until well blended. Gradually add the flour mixing thoroughly. Roll rounded teaspoons of dough into balls and dip the top of each ball in sprinkles. Place (sprinkle side up of course) on ungreased cookies sheets and bake 8-10 minutes at 375 degrees. Let stand on cookie sheet for 2 minutes. Remove and cool.

Caramel Popcorn 8 c Popped popcorn (about 1/3 to3/4 c Packed brown sugar1/3 c Margarine or butter3 tb Lt. corn syrup1/4 ts Baking soda1/4 ts VanillaPre heat oven 300 Remove all unpopped kernals from popped corn. Place popcorn in greased 17x12x2-inch baking pan. Keep popcorn warm in a 300 oven while making carmel mixture. Butter the sides of a heavy 1 1/2 quart saucepan.in Saucepan combine brown sugar, margarine or butter, and corn syrup. Cook and stir over medium heat to bioling. Clip candy thermometer to side of pan. Cook and stir medium heat to 255 hard-ball stage(about 4 min.) Remove saucepan from heat. Stir in baking soda and vanilla; pour over popcorn. Stir gently to coat. Bake in a 300 oven for 15 minutes; stir. Bake 5 minutes more. Transfer popcorn mixture to large pieces of foil; cool completly. Break into clusters. Store tightly covered. Makes about 9 cups. For an extra bonis you may want to add your favorite kind of peanut.

1 1/4 cup flour, 1/2 cup sugar,1/2 cup walnut crumbs, 1/2 cup butter softened, 1 egg, 3/4 cup rolled oats, 1 can blueberry pie filling.In large bowl combine flour, sugar, nuts, butter and egg. Stir together with wooden spoon. Stir in rolled oats. Press half of the mixture into greased 9 inch square pan. Spread blueberry pie filling over crust. Crumble remaining half of the flour mixture evenly over pie filling. Bake in 325F/165C oven for 45-50 min. or until golden brown. Cool completely or refrigerate for a couple hours. Cut into bars. Enjoy.

chocolate port mousse:melt (8oz) chocolate with (1/4cup) butter over hot boiling water,then let cool.in a bowl beat egg yoks(8) until light,then gradually beat in 2/3cup of sugar and the port wine (2tbsp) .beat until mixture thinkens takes about 5 minutes.add chocolate to egg-yolk mixture mix until all well blended.in a other bowl beat egg whites(8) with salt(a pinch)until stiff peaks form.add about one quarter of the egg whites to the chocolate mixture,mix slowly until smooth and well blended.then fold the rest of the egg whites.pour into a greased 10cup souffle dish, cover and refrigerate for 2 hours or over night even better.when done add some whipping cream and some grated chocolate on top and there you have it your in heaven...mmmmm... ;)

My grandmother's cannoli recipe: Shells: Sift together in bowl: 2 cups flour 1/4 cup sugar 1 teaspoon cinnamon 1/4 teaspoon salt With pastry blender add 3 tablespoons of shortening, stir in 2 well beaten eggs and blend in 2 tablespoons of white wine and 2 tablespoons of cold water. Knead and wrap in wax paper and chill for 30 minutes. Roll out dough and cut out 5" x 4" ovals with pastry cutter. Wrap ovals loosley around tube, seal with slightly beaten egg whites and fry until golden. Filling: combine and beat until smooth: 1 1/2 pounds ricotta cheese 1 1/4 cups confectioner's sugar 2 teaspoons vanilla extract stir into mixture: 1/2 cup finely chopped candied citron 1/4 cup grated sweet chocolate Chill mixture for at least 2 hours before filling shells.
